LSSU’s Culinary Arts Chef Certificate Program
The Culinary Arts Chef Certificate is a one-year, 30 credit program offered over three terms at our Hessel – Les Cheneaux Regional Center and housed within the Les Cheneaux Culinary School and Restaurant. The program features farm-to-table cuisine and sustainable solutions, and includes principles of cooking, fine dining, food service, food preservation and safe storage of locally sourced wholesome and delicious foods.
The open-lesson plan is devoted to hands-on experience learning in all aspects of a professional kitchen as they occur in a real environment. Students enrolled in the program use locally produced organic foods whenever possible, including free range, organic, local meat and dairy from reputable sources. An emphasis is placed upon creating as little trash as possible, and the compost created at the site is used to create soil for local farms. The program emphasizes practices for sustainability as a cornerstone learning outcome for students.
Chef certification qualifies graduates for careers as executive chefs, sous chefs, private chefs, pastry chefs, culinarians, culinary entrepreneurs, restaurant owners or kitchen managers.

See LSSU’s Acadmic Catalog for details about the courses and requirements for the program:
